My Gigabyte GA-M57 SLI-S4 recently died and I need a replacement board that will utilize my processor and memory (DDR2, Dual Channel 1GB and 2x500 Single Channels) will this board meet my needs?

This one only has 2 DDR2 slots so you can install 2 sticks of DDR2 memory into it. The other slots are DDR3 so you wouldn't be able to plug in the 3rd stick. You may want to look at item A1001D0. You would need a motherboard combo like that one and you can purchase matching ram like item c3167. The main issue now is IDE ports have slowly been phased out so you would either run both your hard drive and cd-rom through one IDE chain or get a IDE controller card to plug in your cd-rom into as the newer motherboards only have one IDE port.
