Hi, I'm a novice when it come to windows, do you think Microsoft Windows Home Server 2011 64-bit (OEM / System Builder) + this version of paralells will do it to run windows on mac ? because I need an actual copy of the WinOS to run paralells, right ?

Hello,
We contacted Parallels just to make sure. Apparently Home Server 2003, and 2008 are supported, but 2011 is not at this time. They said it should be in the near future, but not ETA as of now. Here is a list of their current OS compatibility as of now:
